Tahini has taken the world by storm recently - from smoothies to falafel sandwiches, this century-old sauce originating from the Middle East has become popular all over the world and in every dish imaginable; in fact, you might have encountered tahini dressings in your salads or snacks already. There’s a good reason for that: this simple yet delicious plant-based condiment adds rich flavours as well as a certain creaminess to everything, truly the chef’s best friend!
Tahini is a condiment prepared from sesame seeds. The seeds are soaked in water first, then hulled. This causes the paste to produce sesame oil, which you will find as a layer above the paste when buying jars of tahini. Tahini can be produced both from toasted sesame seeds or from untoasted seeds (“raw tahini”). The best way to use tahini? In a salad dressing of course!
As tahini is a sesame paste, it has a rich sesame flavour. The sesame seeds being hulled whole, you will also find the tahini to have a creamy texture. To thin the tahini (that tends to be quite thick), it is common to mix it with olive oil or a bit of water.
